Beetroot and Orange salad with Walnut and truffle 'cheeze'.



My boyfriend has gone to America without me. :( :(
That means he has taken his camera with him so I am left with my old thing. Its pretty hard to make the snaps look as good as they do with his camera but I will keep trying.

I found this AMAZING cheese at Leo's today. Its made of walnuts and truffle oil and it has a really nice creamy texture and that amazing truffley flavour. Its really expensive at about $11 for a jar but I thought it would go amazingly with this salad and it did.










Beetroot, orange and walnut cheese salad

Ingredients:

5 medium beetroot
3 Tablespoons olive oil
3 Tablespoons balsamic vinegar
1 Can of lentils
2 handfulls rocket
2 Oranges segmented
Walnut cheese to taste

Dressing:

Juice of 1/2 orange
2 Tablespoons olive oil
Good pinch of sea salt
1 splash of balsamic vinegar
1 teaspoon soy sauce


Method:

Peel and chop beetroot and place in oven tray and dress with oil and balsamic vinegar.
Cook on high for about an hour or until soft with a bit of bite.
Allow to cool when cooked and add lentils, rocket and orange. Dress and blob with cheese.






How beautiful are these trays? I got them for my birthday on sunday.

  1. This looks amazing! I love beets, but I often get stuck in ruts and eat them the same way every time. I'll have to try this!!

  2. Love it, wanted to make a roast beetroot salad today and just found your recipe (although being in a hostel makes things harder %) And a little inside info, there is a shop not far from leos (103 high st in fact) where you can botanical cuisine for maybe 8 bucks a jar.*
