Apple Cinnamon Muffins.

I made these bad boys the other day. I was trying to be really tricky and put heaps of apple in them so they would be really moist. They turned out really moist and tasty but they fell apart because there was just too much fruit! I would use 2 apples instead of 3 next time.




Apple & Cinnamon Muffins

Ingredients:
2 Cups plain flour
1 Tablespoon baking powder
3 teaspoons ground cinnamon
1 cinnamon stick
3/4 cup brown sugar
2 (not 3) apples
1/2 cup melted nuttelex or vegan butter substitute
2 teaspoons egg replacer whisked with 4 tablespoons water
3/4 cup coconut, rice or soy milk


Method:
Pre-heat over to 180 degrees celsius
Peel and core apples. Chop into 1 or 2cm pieces.
Place apples in a pot with 1/4 cup water and cinnamon stick and simmer on low heat for about 5 mins or until soft but not broken down.
Sift flour, baking soda, cinnamon and sugar in a large mixing bowl. Add the chopped apples when ready and mix.
Add the milk, egg mixture and nuttelex and stir till combined. Do not over mix.
Spoon into greased or patty pan lined muffin tins and cook in oven for 20 mins.
If skewer comes out clean the muffins are ready.
Makes 8 large muffins.
