Cheese Cake for 1



My friend Jenny bought me an Energy ball the other day before we did personal training. It was made of loads of delicious yum yums like nuts and cocao and spirulina.
I took some inspiration from those and made some energy balls of my own.  I used the mixture as a base for this cheesecake for one.




Lemon Cheeze cake

Ingredients:
3/4 cup raw nuts
4 prunes
1 teaspoon coconut oil
2 Tablespoons dessicated coconut
2 teaspoons agave nectar





Method:
Blend nuts till fine crumb. Add torn prunes and blend.
Add remaining ingredients and blend till sand like texture.
Press into small cheesecake dish and refrigerate.


Filling

Ingredients:
1/4 tub Toffuti better than cream cheese
2 Tablespoons icing sugar
1/2 teaspoon vanilla
1 teaspoon coconut oil
2 teaspoons chia seeds
zest and juice of half a lemon


Method:
Blend all ingredients until smooth. Spread evenly over cheesecake base and refrigerate.
When set cover in blueberries and dust with icing sugar.
