Chocolate cookies.

I undercooked these and it only made them more delicious!!!



These were chewy and gooey and so so perfect!


Ingredients:
1 1/4 cup Nuttelex
2 Cups Sugar
2 'eggs' of egg replacer
2 teaspoons vanilla
3/4 Cup Cocoa
1 teaspoon Baking soda
1/2 teaspoon Salt
1 teaspoon apple cider vinegar


Method:
Preheat oven to 180 celsius.
Cream the Nuttelex and sugar in a large bowl until light and fluffy.
Add your egg mixture and vanilla and beat well.
Combine flour, cocoa, baking soda and salt. Gradually blend into creamed mixture.
Add Vinegar
The mixture is quite wet.
Roll into balls and place on greased baking tray.

Cook for about 10 mins. Cool completely.


I filled mine with white chocolate frosting recipe from Veganbaking.net. 

White chocolate frosting

Ingredients

1 3/4 cups granulated white sugar
1/4 cup + 3 tablespoons water
1/4 cup soy milk powder
2 Tablespoons amber agave or corn syrup
1/2 teaspoon salt
1 cup melted cocoa butter at room temp
1 teasppon Vanilla


Method 

In a small saucepan whisk together sugar, water, soy milk powder, agave and salt.

 Whisk frequently over medium heat. 
When it starts to simmer, insert a candy thermometer and bring the mix to 110 degrees.
Transfere the to a mixing bowl and whisk in the cocoa butter and vanilla.
Place in the fridge for 1 hour. Whisk then place back in the oven for 30 mins. 
Beat with beaters for a good 3 minutes until light and fluffy. Mine was runny because i didn't beat it at the end because I'm stupid.

      I never would have noticed about the flour, so thanks for letting me know.
      I honestly cannot remember how much I added now :(. Im going to do an experiment and let you know. cheers again x

    3. Finally got a chance to make these bad boys! They were delicious, however once I made them into sandwiches with the white chocolate frosting, the whole package was a little too oily. I made a second batch and upped the flour to two and a half cups, and they were perfect! So happy. I was never a sandwich cookie fan until I had a mindblowing one at Babycakes in NYC. And these cookies are just like the Babycakes ones, dare I say, even better! Thanks for the awesome recipe x.
