Mixed berry muffins

I am so totally ready to get back into the blogging. Its been too long! :(

The last few days it was been so hot that putting the oven on would have been horrific. The weather today has dramatically changed so I decided to crank it up and make some muffins.
I made these bad boys are made with cocoa butter instead of margarine just to try it out. As a result they taste a bit white chocolatey.



Mixed Berry and white chocolate-ish muffins


Ingredients:

2 cups self raising flour
1/2 cup raw sugar
2 Big handfuls of frozen mixed berries
1/2 cup melted cocoa butter or nuttelex
1 teaspoon vanilla
1 cup rice milk
1/4 cup coconut milk

Method:

Pre-heat over to 180 celsius.
Combine all dry ingredients well. Mix in all wet ingredients except the berries.
Fold through the berries at the last minute to avoid them colouring the whole
mixture and breaking  up.
Pour the mixture into line muffin tins.
I topped mine with shredded coconut and a sprinkling of brown sugar.
Baking in oven for about 40 minutes or until skewer come out clean.





Featuring my Nana's yellow tea set that she just gave to me. Isn't it beautiful? 
The whole set includes 6 tea cups, 6 saucers, 6 cake plates and 2 large cake plates. 
I really want to have a fancy tea party now!
