Coconut flour and cranberry muffins

Coconut flour..... it just sounds like its going to taste incredible doesn't it!
Anything with coconut is good but when I saw a packet of coconut flour I just imagined the most delicious cakes and muffins and biscuits. 
I have never used it before today but couldn't wait to try it out on something. Im going to make some gnocci with it this week but I started with these coconut muffins.




I just winged the recipe and at first the batter was really wierd and grainy but I kept adding liquid and it seemed to work out ok.
Im just so excited about this flour. I want to make millions of things with it. Maybe a chocolate cake or a banana bread or pancakes or even savory fritters. 




So the muffins didn't turn out like muffins but they are soo soo yummy. They basically just didn't stick together at all so they are kind of just like a crumble but would make an amazing dessert with a bit of soy icecream.

  1. I've not used coconut flour, but I've seen it called for in raw vegan dessert recipes. So I know you can supposedly make stuff using it that don't require baking. Like raw cupcakes and pies?

    1. It would work really well in raw desserts as it gets sticky like sand and doesn't go doughy like flour.
      I think making raw coconut biscuits is the next thing!

  2. I just bought a bag of coconut flour for the first time and had the same thoughts! Does it actually give things a coconut-y taste? I haven't tried mine yet.

    1. It has an amazing coconutty flavour but thats is good for savory and sweet. You will love it Im sure!
