Tofu rice paper rolls and the tangiest dipping sauce!

Cutting vegetables in large quantities is so relaxing! This is why I love to make rice paper rolls.
Put on an episode of the series I am watching at that moment and just chop away for as long as it takes. I love it!! Since my boyfriend is away I didn't have many veggies to chop as its only for 1 :(
 It was still fun.
I make these when ever  I am watching my calories intake as they are so good for you.



Rice paper rolls with Tofu
Makes 7 rice paper rolls

Ingredients:
1 large carrot
1 10 cm piece of cucumber
1/2 a block of firm tofu
1/2 avocado
1 hand full of mint leaves
7 Vietnamese rice paper sheets

You can basically put what ever you want in these! I don't really like the rice noodles but traditionally they would be in there. If you like coriander add that too.


Method:
Cut tofu into strips and fry on a dry non stick pan until brown. Leave to cool.
Chop carrot and cucumber into thin batons.
Soak 1 rice paper roll in warm water for a few seconds and fill with all ingredients the sprinkle with mint.


Dressing:
4 Tablespoons of soy sauce
2 Tablespoons of Japanese rice vinegar
1 teaspoon sesame oil
1 teaspoon of chilli paste (or to taste)
Juice of half a lime
1 1/2 teaspoons of agave of sweetener of choice
1 teaspoon finely grated ginger

Method:
Mix all ingredients together and adjust flavours to achieve the right balance for you.


I could eat about 50 of these things in one sitting but I shouldn't!

  6. Beautiful! I love rice paper rolls, they're so fresh. I usually put coriander or mint in too.

    I know what you mean about chopping vegetables in large quantities...I actually find the dipping, filling and rolling of rice paper rolls to have a soothing rhythm too :)

      I have a wierd relationship with coriander. I don't hate it but in certain things I can not stand it.
      Maybe its because my Dad hates it so therefor we never ate it growing up.
