Caramel Slice

Caramel slice was my absolute favourite when I was a kid. I was really sad when  I became vegan and realised I couldn't eat it anymore :(
About a year ago while shopping at the Vegan grocer 'The Radical Grocer' in Brunswick I found Soy sweetened condensed milk!
This stuff is uber pricey but pretty good for this recipe. The caramel does not set like the non vegan version but it comes pretty close.




Caramel Slice

Ingredients:
Base
1 cup plain flour
1 cup desiccated coconut 
3/4 cup brown sugar 
1/2 cup melted nuttelex

Caramel
1 can soy sweetened condensed milk 
1/2 cup nuttelex
2 Tablespoons golden syrup

Top
2 blocks lindt dark chocolate 
30g copha 


Method:
Pre heat over to 180 degrees.
In a mixing bowl combine the dry ingredients then add melted nuttelex.
Spread on lined slice tin and bake in over for about 10 mins.

Place condensed milk, nuttelex and golden syrup in a pan and heat until nuttelex is melted. 
Cook over low heat for about 10 mins until the mix has thickened. 
pour over base and cook for further 10 mins.

Melt chocolate and copha in a pan the pour over cooled and set caramel. 
Refrigerate for a couple of hours.







I love this photo (above) but there is a tiny little bit of fluff on the top piece of slice and it is just killing me. I probably shouldn't have mentioned it because I am probably the only one who has noticed! 
Its so annoying!

  1. Oooh! There's a tinned caramel (I think it's by the same people). I've made Caramel Slice with it before. It was pretty freaking good. Yours looks fantastic too!

    1. Oh yeah! I have seen the caramel but have never tried it! Going to try another Aussie fav and make a jelly slice soon! I used to make that for all the cake stalls at primary school!!

  2. Oooh, those look amazing!! And I wish we had soy sweetened condensed milk around here! I've seen a few recipes to make it, but I've never tried. Also, I didn't notice that fluff in the pic until you said something, but I always see things like that in my pictures and it drives me crazy. :-)

      The condensed milk is from brazil and its called 'soymilke, condensado de soja'.
      Maybe that will help you find it!

  4. That condensed milk sounds so neat! I haven't seen anything like that in the US yet. I just ordered some Bird's custard powder from the UK that I am pretty excited about though!

    1. I don't know what bird's is. The custard powder I buy is accidentally vegan already.
      The condensed milk is out of this world. Its worth ordering it online if you can find it.

  5. My daughter and I were also shopping at Radical Grocery Store the first time we saw soy condensed milk...we did a similar happy dance to the one we did when we found out about vegan churros! Now our supermarket stocks it too- and we eat it waaaaay too much. :-P

      The rad grocer is sooo good but I just spend my whole pay check when i go there so I try to limit it to once a month!
