Apple Tea Cake

I arrived home this moring from a holiday in Perth and I was beyond tired! I had personal training this morning and I almost fell asleep on the drive home. I jumped straight into bed and slept till about 1pm!
I woke up starving and there was absolutely no food in the house due to no one being here for a week so I did a BIG shop and grabbed the ingredients for a lovely little apple tea cake.




Apple Tea cake
Makes one tiny one person cake.

Ingredients:
3/4 cup flour
1/2 cup brown sugar
1 teaspoon vanilla
1/2 cup melted nuttelex
1/2 cup non dairy milk
1 teaspoon egg replacer, mixed with 2 Tablespoons water
1 teaspoon cinnamon
1/2 teaspoon apple cider vinegar
1 teaspoon baking powder
1/2 teaspoon all spice
1/2 sliced apple

Method:
Sift flour and baking powder in a bowl. Add sugar, vanilla, nuttelex, milk, cinnamon, egg replacer and all spice.
Mix with beaters untill smooth batter.
Add the vinegar and stir. Pour into lined or greased tin and decorate with sliced pieces of apple and bake for about 30 mins or until skewer comes out clean.







Eat it with a really sugary cup of tea!

      Nuttelex is a vegan butter substitute. Its really good for baking.
