Creamy Tahini dressing

I asked my boyfriend to get ingredients for a salad on his way home from work a few months ago. I was expecting maybe some tomatoes, an avocado, cucumber, and maybe some lettuce. He bought home.......
2 carrots,
 a peach 
and a handful of walnuts. 
Not exactly what I had in mind.....
 I was in that "hangry" stage where you are so hungry that you just want to scream so I kind of cracked it big time. 
We needed to eat so I threw together the peach sliced up thinly, toasted the walnuts, some red onion, and a bunch of baby spinach. I also found some fry's strips in my freezer so I fried them up and threw them in too. The salad needed to be dressed and this is how this recipe came along...out of pure desperation haha.




Tahini Dressing 

Ingredients:
3 teaspoons Tahini
3 teaspoons Toffuti better than cream cheese 
1/2 teaspoon soy sauce 
1/2 teaspoon maple syrup
1 teaspoon apple cider vinegar 
Good quality olive oil to emulsify 
Salt and pepper
Water

Method:
Add all ingredients to a blender or whisk up in a bowl until smooth and creamy. Add more oil if mixture has separated. Add water in small amount to get desired consistency 






The salad was delicious and since then I have made it a few more times. My boyfriend says "I told you so" about it all the time. As if it was his awesome shopping that made the dinner yummy :) (it wasn't)
